Ingredients
Scale
Broth
- 4 cups dashi broth (or vegetable broth)
Main Ingredients
- 1/2 cup tofu, cubed
- 1/4 cup sliced mushrooms
Seasonings & Garnish
- 2 green onions, chopped
- 1 tablespoon soy sauce
- 1 tablespoon mirin
Instructions
- Heat the broth: In a medium pot, bring the dashi broth to a simmer over medium heat to prepare the base of the soup.
- Add tofu and vegetables: Add the cubed tofu, sliced mushrooms, soy sauce, and mirin to the simmering broth. Let it cook gently for 5 minutes until the tofu is warmed through and the mushrooms are tender.
- Finish with green onions: Remove the pot from heat and stir in the chopped green onions to add freshness and garnish to the soup.
- Serve: Ladle the hot soup into small bowls and serve immediately for a warm, comforting meal.
Notes
- You can substitute dashi with vegetable broth for a vegetarian or vegan option.
- Adjust soy sauce to taste for a saltier or milder flavor.
- Add other vegetables like spinach or carrots for added nutrition.
- Use silken tofu for a softer texture or firm tofu to hold the shape better.
