Instructions

  1. Cook Tapioca Pearls: In a pot, combine 1 cup of sago with 6 cups of water. Cook over medium-low heat for 10 minutes, stirring constantly to prevent the pearls from sticking together.
  2. Steam the Pearls: After cooking, turn off the heat and cover the pot. Let it sit for 3 minutes to allow the pearls to steam and become translucent and tender.
  3. Rinse Tapioca: Carefully drain the cooked tapioca pearls and rinse them under cold water to stop the cooking process and remove excess starch.
  4. Prepare Mango Mixture: Dice the fresh ripe mangoes. Set aside half for garnish. Place the remaining mango pieces in a blender along with condensed milk and full fat coconut milk. Blend until smooth and creamy.
