Ingredients
Scale
Mashed Potato Filling
- 4 large potatoes, peeled and chopped
- 2 tablespoons butter
- ½ cup milk
- 1 cup shredded cheese (cheddar or your favorite)
- Salt and pepper, to taste
Pie Crust & Topping
- 1 prepared pie crust (store-bought or homemade)
- 1 egg, beaten (for egg wash)
- Fresh herbs (like chives or parsley), to taste (optional)
Instructions
- Preparation: Place the peeled and chopped potatoes into a large pot. Cover with water, add a pinch of salt, and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.
- Mash Potatoes: Drain the cooked potatoes and return them to the pot. Add butter and milk, mashing until the mixture is creamy. Stir in the shredded cheese and season with salt and pepper. Allow the mixture to cool for a few minutes to make it easier to handle.
- Preheat Oven and Prepare Crust: Preheat your oven to 375°F (190°C). Roll out the pie crust and fit it into a pie dish, ensuring it is evenly spread.
- Fill the Pie: Spoon the mashed potato mixture evenly into the pie crust, smoothing the surface for an even layer.
- Top the Pie: If using a second pie crust, place it over the filling and seal the edges by pinching them together. Brush the top crust with the beaten egg wash to achieve a golden, glossy finish. If you prefer an open-faced pie, simply sprinkle fresh herbs on top of the filling.
- Bake: Place the pie in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown and fully cooked.
- Cool and Serve: Remove the pie from the oven and allow it to cool for about 10 minutes before slicing. Serve warm for the best flavor and texture.
Notes
- For extra flavor, add cooked bacon or caramelized onions to the mashed potato filling.
- Use sharp cheddar cheese for a more pronounced cheesy taste.
- Letting the filling cool before assembling helps prevent a soggy crust.
- Serve with a side of steamed vegetables or a fresh salad to balance the richness.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven for best results.
