This Instant Pot Parmesan Prosecco Risotto is a creamy, flavorful Italian dish made quickly and easily using an Instant Pot.   • 2 Tbsp butter
  • 1 shallot, finely chopped
  • 3 garlic cloves, minced
  • 1â…“ cups uncooked Arborio rice
  • 1 cup prosecco or other sparkling white wine, divided
  • 3 cups chicken broth
  • 1 cup fresh Parmigiano-Reggiano cheese, grated
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste


Instructions

  1. Sauté Aromatics: Turn the Instant Pot on to the sauté function. Add butter and swirl until melted. Add the finely chopped shallot and sauté for 2 minutes until softened. Add minced garlic and cook for 30 seconds, stirring constantly to prevent burning.
  2. Toast the Rice: Add the Arborio rice to the pot, stirring constantly for 1 minute to toast and coat the rice in butter and aromatics.
  3. Add Prosecco and Begin Cooking: Pour in ½ cup of the prosecco, cooking for 1 minute or until the liquid is mostly absorbed, stirring frequently. Then, turn off the sauté mode.
  4. Add Liquids and Pressure Cook: Stir in the remaining ½ cup prosecco and all of the chicken broth. Seal the Instant Pot lid and set it to manual or high pressure cooking for 8 minutes.
  5. Release Pressure and Finish: Once the cooking cycle completes, perform a quick steam release. Remove the lid carefully and stir in the grated Parmigiano-Reggiano cheese and Italian seasoning. Season with salt and black pepper to taste. Let the risotto stand for 5 minutes to thicken and meld flavors before serving.

Notes

  • Use Arborio rice for the best creamy texture typical of risotto.
  • Prosecco can be substituted with any sparkling white wine or a dry white wine for similar results.
  • For a vegetarian version, substitute chicken broth with vegetable broth.
