Description

This Hot Honey Roasted Carrots recipe offers a delightful balance of sweet, spicy, and savory flavors with tender roasted carrots drizzled in spicy honey and a creamy, tangy Greek yogurt sauce. Garnished with crunchy pistachios and fresh herbs, it makes an easy, healthy, and impressive side dish perfect for any occasion.

Ingredients

Scale

Carrots

  • 2 pounds carrots
  • 1 Tbsp hot honey (I used Mike’s Hot Honey)
  • 1 Tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

Greek Yogurt Sauce

  • 1/2 cup plain Greek yogurt
  • 1/3 cup parsley, chopped
  • 1/2 lemon, juiced
  • 1/4 tsp garlic powder
  • Salt, to taste
  • Pepper, to taste

Garnishes (Optional)

  • Chopped pistachios
  • Fresh parsley
  • Red pepper flakes

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the carrots.
  2. Prepare Carrots: Peel, wash, and thoroughly dry the carrots. Then, chop them into thinner pieces about 1/2-inch thick and 3 inches long for even cooking.
  3. Toss and Roast Carrots: Place the chopped carrots in a large baking dish. Drizzle with hot honey and olive oil, then season with salt and pepper. Toss until well coated. Arrange the carrots in a single layer and roast in the oven for about 35 to 45 minutes, tossing halfway through, until they are lightly browned and fork-tender but still with a slight crunch.
  4. Make Yogurt Sauce: In a food processor, combine the plain Greek yogurt, chopped parsley, fresh lemon juice, garlic powder, salt, and pepper. Blend until the mixture is smooth and well combined. If a food processor is not available, finely chop the parsley and mix all ingredients together in a small bowl.
  5. Serve: Remove the roasted carrots from the oven and transfer them to a serving dish. Drizzle with the prepared Greek yogurt sauce. Garnish with chopped pistachios, fresh parsley, red pepper flakes, and additional salt and pepper if desired. Serve hot and enjoy!

Notes

  • For roasting, you can use a large parchment-lined baking sheet if you don’t have a large baking dish.
  • The carrots should remain slightly crunchy for the best texture, so do not overcook.
  • The yogurt sauce can be made ahead of time and stored in the refrigerator for up to 2 days.
  • Adjust the amount of hot honey depending on your preferred spice level.
  • Garnishes such as pistachios and red pepper flakes add a nice texture and flavor contrast but are optional.
