Instructions
- Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar until evenly mixed.
- Add Wet Ingredients: Make a well in the center of the dry ingredients and pour in the vegetable oil and warm water. Add vanilla extract if using for extra flavor.
- Form the Dough: Mix the ingredients together until a cohesive dough forms. Turn it out onto a lightly floured surface and knead for 2-3 minutes until the dough is smooth and elastic.
- Shape the Dough: Divide the dough into 12 equal portions. Roll each portion into a ball, then flatten each into a disc about 1/2 inch thick to prepare for frying.
- Heat Oil: In a large, deep skillet, heat about 2 inches of vegetable oil over medium-high heat. Test the oil by dropping a small piece of dough in—it should bubble and rise quickly to indicate it’s ready.
- Fry Sopapillas: Carefully add the dough discs into the hot oil in batches to avoid overcrowding. Fry for 2-3 minutes on each side until they puff up and turn golden brown. Use tongs to flip them gently.
- Drain Excess Oil: Remove the fried sopapillas and place them on paper towels to soak up any excess oil.
