Scale
Filling
- ¾ cup sweetened condensed milk
- 1 ¼ teaspoons peppermint extract
- â…› teaspoon vanilla extract
- 4 cups powdered sugar
Coating
- 2 cups dark melting/dipping chocolate
Instructions
- Prepare the Dough: In a stand mixer, combine the sweetened condensed milk, peppermint extract, and vanilla extract. Gradually add half of the powdered sugar while mixing until a dough begins to form.
- Knead and Roll: Transfer the dough onto parchment paper and knead, adding the remaining powdered sugar as needed. Roll the dough into a ½-inch thick circle, dusting with powdered sugar to prevent sticking.
- Cut and Freeze: Use a cookie cutter to cut out circles from the dough. Place them on a parchment-lined baking sheet and freeze for 15 minutes to firm up.
- Melt Chocolate: Melt the dark chocolate in a microwave-safe bowl in 20-30 second increments, stirring between each until smooth. Allow it to cool slightly before dipping.
- Dip Patties: Dip each frozen patty into the melted chocolate, ensuring full coverage. Return them to the parchment-lined baking sheet.
- Set the Patties: Refrigerate the coated patties for about 20 minutes until the chocolate hardens and the patties are set.
Notes
- Ensure the peppermint extract is of good quality for the best flavor.
- Use a cookie cutter size around 1.5 to 2 inches in diameter for ideal portion sizes.
- If the dipping chocolate is too thick, you can add a teaspoon of vegetable oil to thin it slightly.
- Store peppermint patties in an airtight container in the refrigerator for up to 2 weeks.
- For a festive touch, drizzle some white chocolate over the coated patties after dipping.
