Description

These homemade healthy strawberry gummy bears are a delicious and nutritious alternative to store-bought gummies, made with fresh strawberries, natural sweeteners, and grass-fed gelatin for a chewy, fruity treat. Perfect for snacking or satisfying your sweet tooth without artificial additives.

Ingredients

Scale

Fruits

  • 1 cup fresh strawberries, hulled and sliced

Sweeteners & Juices

  • 2 to 3 tablespoons honey or maple syrup, to taste
  • 2 tablespoons fresh lemon juice

Gelatin

  • 3 tablespoons grass-fed gelatin powder

Instructions

  1. Blend the Strawberries: Add the sliced strawberries to a blender or food processor and blend until completely smooth. You should have about 3/4 cup of purée when finished.
  2. Strain the Purée (Optional): For a smoother gummy texture, pour the purée through a fine mesh sieve into a small saucepan to remove seeds and any pulp.
  3. Warm the Mixture: Add the lemon juice and honey or maple syrup to the purée in the saucepan. Heat over low to medium heat while stirring constantly. Do not allow the mixture to boil; it just needs to be warm enough to dissolve the gelatin.
  4. Add the Gelatin: Slowly sprinkle the gelatin over the warm mixture while whisking continuously to prevent clumping. Continue whisking for 2 to 3 minutes until the gelatin is completely dissolved and the mixture is smooth.
  5. Fill the Molds: Use a dropper or small spoon to carefully pour the mixture into silicone gummy bear molds. Work quickly, as the gelatin mixture will begin to set as it cools.
  6. Chill the Gummies: Transfer the molds to the refrigerator and chill for at least 30 minutes, or until the gummies are fully set and firm to the touch.
  7. Remove and Store: Gently pop the gummies out of the molds and store them in an airtight container in the refrigerator for up to 1 week.

Notes

  • For a vegan version, substitute gelatin with agar-agar powder, but note the texture will differ slightly.
  • Adjust the amount of honey or maple syrup based on your desired sweetness.
  • Using fresh lemon juice helps balance sweetness and enhances flavor.
  • Work quickly when pouring the mixture into molds to prevent premature setting.
  • Keep gummies refrigerated to maintain firmness and freshness.
