Description

Instructions

  1. Cook the Freekeh: Rinse the freekeh under cold water and drain. In a medium pot, bring 2 cups of water or vegetable broth to a boil. Add the freekeh, reduce heat to low, cover, and simmer for about 20-25 minutes until tender and water is absorbed. Remove from heat and let it cool to room temperature.
  2. Prepare the Vegetables and Herbs: While the freekeh cooks, halve the cherry tomatoes, dice the cucumber, finely chop the red onion, and chop the fresh parsley, mint, and cilantro. Set aside.
  3. Make the Dressing: In a small bowl, whisk together the olive oil, freshly squeezed lemon juice, apple cider vinegar (if using), salt, and pepper until emulsified.
  4. Assemble the Salad: In a large bowl, combine the cooled freekeh, prepared vegetables, and herbs. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
