  • 1 (15-ounce) can white beans, drained

Instructions

  1. Sauté Vegetables: Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, chopped celery, and sliced carrots. Cook for 7-8 minutes, stirring occasionally, until the vegetables are softened and fragrant.
  2. Add Broth and Simmer: Pour in the vegetable broth and crushed tomatoes into the pot. Add the drained red kidney beans, white beans, chopped green beans, chopped zucchini, Italian seasoning, and sugar. Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 15 minutes to allow the flavors to meld.
  3. Cook the Pasta: Stir in the small pasta and continue cooking for 8-10 minutes until the pasta is al dente, absorbing some of the soup’s flavors. Taste and season with salt and pepper as desired.
