For the Cucumber Lemonade Base
- 1 large cucumber, cut into chunks
- 2 cups water
- 1/2 cup liquid honey (or other vegan honey substitute)
- Juice of 7 lemons
To Serve
- 3-4 cups sparkling water or still water
- Lemon slices, for garnish
- Cucumber slices, for garnish
- Ice cubes (optional)
- Sugar for rimming glasses (optional)
Instructions
- Blend the Base: Add the cucumber chunks, water, honey, and freshly squeezed lemon juice into a blender. Blend on high speed until the mixture is very smooth and well combined.
- Strain the Mixture: Pour the blended cucumber mixture through a fine strainer or sieve into a large pitcher to remove any remaining pulp and ensure a smooth lemonade.
- Add Sparkling Water and Garnish: Stir in 3 to 4 cups of sparkling water or still water to the pitcher. Add lemon and cucumber slices for garnish, and optionally ice cubes to chill the drink.
- Serve: Pour the lemonade into glasses, optionally rimmed with sugar. Garnish with additional lemon and cucumber slices, and enjoy with a straw.
Notes
- For a vegan version, use a plant-based honey substitute like agave syrup or maple syrup instead of honey.
- Adjust the sweetness by adding more or less honey according to your taste.
- Using sparkling water adds a pleasant fizz, but still water works equally well if preferred.
- Rim glasses with sugar for an extra touch of sweetness and presentation flair.
- To keep the lemonade colder longer, add ice just before serving or chill all ingredients beforehand.
