Instructions
- Preheat Grill: Preheat a grill or grill pan to medium-high heat to ensure it’s hot enough to caramelize the watermelon and create appealing grill marks.
- Prepare Watermelon: Lightly brush both sides of the watermelon wedges with olive oil and sprinkle each side with a small pinch of salt to enhance flavor and improve caramelization.
- Grill Watermelon: Place the watermelon wedges on the preheated grill and cook for 2 to 3 minutes on each side, or until grill marks form and the surface is slightly caramelized. Once done, remove from the grill and set aside.
- Make Balsamic Glaze: In a small saucepan, combine the balsamic vinegar and honey or brown sugar if using. Bring the mixture to a simmer over medium heat and cook for 8 to 10 minutes until reduced by half and syrupy in consistency. Remove from heat and let cool slightly; the glaze will thicken further as it cools.
- Assemble and Serve: Drizzle the balsamic glaze over the grilled watermelon slices. Garnish with fresh mint leaves and sprinkle with crumbled feta or goat cheese if desired. Serve immediately for the best flavor and texture.
