Description

This Grilled Cheese Burrito is a delicious fusion dish combining the melty goodness of cheddar cheese with savory fillings like shredded chicken, black beans, and corn, all wrapped inside a warm flour tortilla. Perfect for a quick lunch or dinner, it’s simple to make with just a few ingredients and cooked on the stovetop to golden, crispy perfection.

Ingredients

Scale

Main Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked chicken, shredded (optional)
  • 1/4 cup black beans, rinsed and drained
  • 1/4 cup corn kernels (fresh or frozen)
  • 2 tbsp salsa

For Cooking and Serving

  • 1 tbsp butter
  • 1/4 cup sour cream (optional)

Instructions

  1. Prepare the tortilla with cheese: Lay one tortilla flat on a clean surface and evenly spread the shredded cheddar cheese over the entire surface to ensure every bite has melty cheese.
  2. Add the fillings: On one half of the cheese-covered tortilla, add the shredded cooked chicken, black beans, corn kernels, and drizzle salsa evenly on top.
  3. Fold the burrito: Carefully fold the tortilla over the fillings to form a half-moon shape, pressing gently to keep everything inside.
  4. Heat the skillet and melt butter: Place a skillet over medium heat and melt the butter, creating a non-stick surface for the burrito.
  5. Grill the burrito: Place the folded tortilla in the skillet and cook until the underside is golden brown and crispy, about 3-4 minutes, then carefully flip and cook the other side for another 3-4 minutes until cheese is fully melted and the tortilla is nicely browned.
  6. Serve: Remove from skillet, slice the burrito in half for easy serving, and add a dollop of sour cream if desired for extra creaminess.

Notes

  • Feel free to omit the chicken to make this a vegetarian dish.
  • Use fresh or thawed frozen corn for best texture.
  • Adjust the salsa level to your spice preference.
  • You can substitute cheddar cheese with any melting cheese like Monterey Jack or mozzarella.
  • To make it spicier, add jalapeños or hot sauce inside.
