Description

Gordon Ramsay’s Tiramisu is a classic Italian dessert featuring layers of espresso-soaked ladyfingers and a rich mascarpone cream. This creamy, indulgent treat is enhanced with a light dusting of cocoa powder and optional dark chocolate shavings, creating a perfect balance of coffee flavor, sweetness, and creamy texture.

Ingredients

Scale

Main Ingredients

  • 4 egg yolks
  • ½ cup granulated sugar
  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 24 ladyfinger biscuits
  • 2 tablespoons unsweetened cocoa powder
  • Dark chocolate shavings (optional)

Coffee Soaking Mixture

  • 1 ½ cups brewed espresso or strong coffee, cooled
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Mascarpone Cream: Whisk the egg yolks and ½ cup granulated sugar together in a heatproof bowl over simmering water for about 5 minutes, until pale and silky. Remove from heat, let cool slightly, then fold in the mascarpone cheese until smooth. In a separate bowl, whip the heavy cream until soft peaks form, then gently fold it into the mascarpone mixture to keep it airy.
  2. Prepare the Coffee Soaking Mixture: Brew strong espresso or coffee and let it cool to room temperature. Stir in 2 tablespoons sugar and 1 teaspoon vanilla extract until the sugar is fully dissolved, creating a sweetened coffee soak for the ladyfingers.
  3. Assemble the Tiramisu: Quickly dip each ladyfinger into the coffee mixture ensuring they are moist but not soggy. Arrange a layer of soaked ladyfingers in the base of a serving dish. Spread half of the mascarpone cream over the ladyfingers smoothly. Repeat with another layer of dipped ladyfingers and top with the remaining mascarpone cream.
  4. Chill and Serve: Cover the assembled tiramisu with plastic wrap and refrigerate for at least 4 hours, ideally overnight, to allow flavors to meld and the dessert to set properly. Before serving, dust the top with unsweetened cocoa powder and garnish with dark chocolate shavings for an elegant finish.

Notes

  • Ensure the coffee is completely cooled before dipping the ladyfingers to prevent them from becoming too soggy.
  • Whisk the egg yolks over simmering water gently to cook them slightly for food safety and creaminess.
  • Be careful when folding whipped cream into the mascarpone mixture to keep it light and airy.
  • For best results, prepare tiramisu a day ahead to allow it to set and blend flavors fully.
  • Optional dark chocolate shavings add texture and extra richness.
