Instructions
- Prepare Baking Sheet: Line a large baking sheet with parchment paper and set aside to prevent the truffles from sticking later.
- Make Cookie Crumbs: Add the gingersnap cookies to a food processor and pulse until a fine crumb forms, ensuring a smooth truffle base.
- Combine Ingredients: Add the cookie butter, powdered sugar, and all the spices (cinnamon, ginger, allspice, cloves, nutmeg, black pepper, and salt) to the food processor. Pulse until fully combined into a homogenous, spiced dough.
- Form Truffle Balls: Use a medium cookie scoop to portion out the mixture evenly, then roll each portion into a smooth ball with your hands. Place each ball onto the prepared baking sheet and chill in the refrigerator for 1 hour to firm up.
- Melt Chocolate Coating: Combine the white chocolate chips and coconut oil in a medium microwave-safe bowl. Heat in 30-second intervals, stirring thoroughly between sessions, until the chocolate is fully melted and smooth.
- Coat Truffles: Dip each chilled truffle ball into the melted white chocolate, ensuring an even coating. Return the coated truffles to the baking sheet to set. If desired, sprinkle with festive sprinkles immediately before the chocolate hardens to add a decorative touch.
