Instructions
- Preheat and Prep: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and make clean-up easier.
- Cut and Season Potatoes: Cut the baby gold potatoes in half or quarters, depending on their size, for even cooking. Toss them with extra virgin olive oil, ½ teaspoon of kosher salt, and ground black pepper to evenly coat.
- Roast: Spread the potatoes cut-side down on the prepared baking sheet in a single layer. Roast them in the oven for 35 minutes, allowing the edges to crisp and develop color.
