Instructions

  2. Add Vegetables and Broth: Add the broccoli florets, diced potato, and broth to the pot. Stir in Italian seasoning and crushed red pepper flakes if using. Bring the mixture to a boil.
  3. Simmer the Soup: Reduce heat to a simmer and cook for 15–20 minutes, or until the broccoli and potatoes are very tender.
  4. Blend the Soup: Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, carefully transfer the soup to a blender in batches to puree. Return the soup to the pot afterward.
