Instructions
- Prepare the Aromatics: In a large pot, heat olive oil over medium heat. Add diced onion and cook for 3–4 minutes until softened. Stir in minced garlic and cook for an additional minute until fragrant.
- Add Vegetables and Broth: Add the broccoli florets, diced potato, and broth to the pot. Stir in Italian seasoning and crushed red pepper flakes if using. Bring the mixture to a boil.
- Simmer the Soup: Reduce heat to a simmer and cook for 15–20 minutes, or until the broccoli and potatoes are very tender.
- Blend the Soup: Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, carefully transfer the soup to a blender in batches to puree. Return the soup to the pot afterward.
- Finish with Cheese and Cream: Stir in the grated Parmesan cheese. For a creamier texture, add the heavy cream or half-and-half and stir until heated through.
