- 2 lbs russet or Yukon Gold potatoes
- 1/2 cup heavy cream or milk, warmed
- 3 tbsp unsalted butter

Instructions
- Prepare the Potatoes: Peel and quarter the potatoes. Place them in a pot filled with salted cold water. Bring to a boil and cook for 15-20 minutes until the potatoes are fork-tender. Drain thoroughly and set aside to steam dry, which prevents watery mashed potatoes.
- Cook the Beef Bites: While the potatoes cook, heat a skillet over medium-high heat and melt the butter. Add the minced garlic and sauté until fragrant but not browned. Add the beef cubes, season with salt and freshly ground black pepper, and cook for 3-5 minutes until browned on all sides yet still juicy inside.
- Mash the Potatoes: Return the drained potatoes to the pot or transfer to a bowl. Mash the potatoes until smooth. Gradually add the warm heavy cream or milk and butter while continuing to mash until the potatoes become creamy, silky, and fluffy. Season with salt and pepper to taste.
- Plate and Garnish: Spoon a generous serving of the creamy mashed potatoes onto plates. Top with the garlic butter beef bites and garnish with freshly chopped parsley for a fresh, colorful finish.
