Description

Delight in these colorful and easy-to-make Funfetti Cake Pops, perfect for any celebration. Made with a classic vanilla cake base mixed with rainbow sprinkles and creamy frosting, then dipped in white chocolate, these bite-sized treats are both fun and festive.

Ingredients

Scale

Cake Base

  • 1 box vanilla cake mix (plus ingredients listed on the box)
  • 1/2 cup rainbow sprinkles
  • 1 cup frosting

Coating and Assembly

  • 12 cake pop sticks
  • 1/2 cup white chocolate chips (for dipping)

Instructions

  1. Prepare the Cake: Follow the instructions on the vanilla cake mix box and bake the batter in a 9×13-inch pan. Once baked, allow the cake to cool completely to ensure it’s easy to handle when forming the pops.
  2. Mix Cake with Frosting and Sprinkles: Crumble the cooled cake into a large bowl, then add the frosting and rainbow sprinkles. Mix together thoroughly until the texture is uniform and holds together well for rolling.
  3. Form Cake Balls: Roll the cake mixture into 1-inch balls by hand and place them on a baking sheet lined with parchment paper. This size is ideal for bite-sized pops that are easy to enjoy.
  4. Melt Chocolate and Prepare Sticks: Melt the white chocolate chips in a microwave-safe bowl, heating in 20-second intervals and stirring until smooth. Dip the tip of each cake pop stick into the melted chocolate, which acts as an adhesive, then insert the stick halfway into each cake ball.
  5. Dip Cake Pops in Chocolate: Dip each cake pop into the melted white chocolate to coat them evenly. Allow any excess chocolate to drip off so the coating isn’t too thick or messy.
  6. Set the Cake Pops: Place the dipped cake pops back onto the parchment-lined baking sheet to allow the chocolate coating to harden completely before serving or decorating further.

Notes

  • Ensure the cake is fully cooled to prevent melting the frosting during mixing.
  • You can substitute white chocolate with colored candy melts for different looks.
  • Store cake pops in an airtight container at room temperature for up to 2 days, or refrigerate for longer freshness.
  • For easier chocolate coating, temper the white chocolate or add a small amount of vegetable oil to thin it out.
  • Feel free to decorate with extra sprinkles before the chocolate hardens for extra festive flair.
