Description

Delicious Fruity Pebbles Cheesecake Tacos are a fun and colorful treat featuring crispy Fruity Pebbles cereal shells filled with a creamy, fluffy cheesecake mixture, topped with whipped cream, sprinkles, and fresh berries. This easy no-bake dessert combines nostalgic cereal flavors with rich cheesecake filling, perfect for parties or a delightful snack.

Ingredients

Scale

Shells

  • 2 cups Fruity Pebbles cereal
  • 1 bag (10 oz) mini marshmallows
  • 2 tbsp unsalted butter

Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Toppings

  • Whipped cream
  • Extra Fruity Pebbles for garnish
  • White chocolate drizzle
  • Rainbow sprinkles
  • Mini marshmallows
  • Sliced strawberries or berries

Instructions

  1. Melt Butter and Marshmallows: In a large saucepan, melt the butter over low heat. Add mini marshmallows and stir constantly until fully melted and smooth.
  2. Coat Cereal: Remove the saucepan from heat and gently fold in Fruity Pebbles cereal until each piece is fully coated with the marshmallow mixture.
  3. Form Shells: Working quickly, spoon portions of the coated cereal mixture onto parchment paper or a greased surface. Flatten each portion into a thin circle about 4–5 inches across.
  4. Shape Tacos: Drape each flattened circle over the backside of a muffin tin or rolling pin to form taco shapes. Allow them to cool and harden for 10–15 minutes.
  5. Prepare Whipped Cream: In a chilled mixing bowl, whip the heavy cream until stiff peaks form. Set aside.
  6. Make Cheesecake Filling: In another bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, then beat until fluffy. Gently fold in the whipped cream until fully combined.
  7. Fill Shells: Once the cereal shells are firm, use a piping bag to fill each shell with the prepared cheesecake filling.
  8. Add Toppings: Top filled tacos with additional whipped cream, extra Fruity Pebbles, white chocolate drizzle, rainbow sprinkles, mini marshmallows, and sliced strawberries or berries as desired.
  9. Serve or Refrigerate: Serve immediately for best texture or refrigerate for up to 2 hours before serving to allow filling to set further.

Notes

  • Work quickly when shaping shells as the marshmallow mixture hardens fast.
  • Use a chilled bowl for whipping cream to achieve better volume.
  • These cheesecake tacos are best consumed within 2 hours to maintain shell crispness.
  • Store refrigerated and covered if making ahead, but assemble toppings fresh before serving.
