Instructions
- Make the Granola Dough: In a mixing bowl, combine oats, cinnamon, almond butter, honey, and vanilla extract. Mix thoroughly until the mixture forms a sticky dough. If it feels too dry, gradually add a bit more almond butter and honey until it holds together well and can be pressed into shape.
- Prepare the Muffin Pan: Line a muffin pan with muffin liners to prevent sticking. Scoop a portion of the granola dough into the bottom of each lined muffin cup. Using your fingers, press down firmly to form a compact and sturdy base layer.
- Add the Yogurt and Toppings: Spoon a generous amount of Greek yogurt into each granola base cup. Top the yogurt with fresh berries of your choice, and add any leftover granola dough on top for extra crunch and texture.
- Freeze to Set: Place the muffin pan in the freezer and allow the granola yogurt cups to freeze for at least 4 hours, or until completely firm and set.
- Serve: Remove the frozen cups from the freezer and let them thaw for a couple of minutes to soften slightly. Serve chilled for a delicious, cool, and nutritious treat.
