  • 1 cup frozen diced onion and bell pepper blend
  • 1 (10-ounce) can diced tomatoes with chilies (like Ro*Tel), undrained

Cheese

  • 1 (8-ounce) shredded Mexican blend cheese (about 2 cups), divided


Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or casserole pan to prevent sticking.
  2. Combine Ingredients: In a large mixing bowl, add the shredded cooked chicken, instant rice, cream of chicken soup, sour cream, frozen diced onion and bell pepper blend, diced tomatoes with chilies (undrained), chicken broth, fajita seasoning, and half of the shredded Mexican blend cheese. Stir everything together until well combined.
  3. Bake the Casserole: Pour the combined mixture into the prepared baking dish and spread evenly. Place the dish in the preheated oven and bake uncovered for 25 minutes.
  4. Add Remaining Cheese and Finish Baking: Remove the casserole from the oven, sprinkle the remaining shredded Mexican blend cheese evenly over the top, and bake for an additional 5 minutes or until the cheese is melted and bubbly.
