- 11 ounces Nilla wafers
- 1.5 cups Pecans
- 1 cup Powdered sugar (plus more for rolling)

- 1/2 cup Spiced rum
- 2 tablespoons Honey
- 2 teaspoons Vanilla extract
Coating
- 1 cup Coating of your choice (finely chopped pecans, powdered sugar, or sprinkles)
Instructions
- Process Nilla Wafers: Place Nilla wafers in a food processor and pulse until finely ground into crumbs. Transfer these crumbs into a large mixing bowl.
- Chop Pecans: In the same food processor, pulse pecans until they are chopped into fine pieces. Add the pecans to the bowl with the wafer crumbs.
- Mix Dry Ingredients: Add the powdered sugar and cocoa powder to the bowl containing the crumbs and nuts. Stir thoroughly to combine all dry components evenly.
- Add Wet Ingredients: Pour in the spiced rum, honey, and vanilla extract to the dry mixture. Stir well until all ingredients are fully blended into a sticky dough.
- Form Balls: Using a tablespoon, scoop out portions of dough and roll them in your hands to create approximately 1-inch diameter balls.
- Coat the Balls: If desired, roll the balls in your preferred coating such as finely chopped pecans or sprinkles by placing the coating on a plate and gently rolling each ball over it.
- Chill: Place the coated rum balls in an airtight container and refrigerate for 1 to 2 days. This resting period allows the flavors to meld and develop fully.
- Final Sugar Coating: Before serving, take the rum balls out of the refrigerator and optionally roll some in additional powdered sugar for extra sweetness and presentation.
- Serve: Arrange the rum balls in candy cups for an attractive presentation and serve chilled.
