Mushroom Burgers
- 4 portobello mushrooms (stem and gills removed)
- 1 large sweet onion (thinly sliced)
- 4 tablespoons unsalted butter (divided)
- 3 tablespoons olive oil (divided)
- 1 ½ teaspoon kosher salt (divided)
- 1 teaspoon garlic powder
- 1 cup gouda cheese (shredded or your favorite cheese)
- 2 cups arugula (divided)
- ¼ cup Truff spicy mayonnaise (or plain mayonnaise)
- 4 burger buns
Instructions
- Prepare the onions: Cut the onion in half and remove the skin, then thinly slice it. Heat a medium pan over medium heat, add 1 tablespoon of butter and 2 tablespoons of olive oil. Add the sliced onions and 1 teaspoon of salt. Cook for 15 minutes, stirring often until onions are caramelized.
- Prepare the mushrooms: While the onions cook, remove the stems from the mushrooms and scoop out the gills using a spoon. Brush both sides of each mushroom with 1 tablespoon of olive oil using a pastry brush. Season with ½ teaspoon of salt and garlic powder.
- Cook mushrooms first side: Heat another pan over medium-low heat, add 3 tablespoons of butter and melt it. Place the mushrooms top side up in the pan, press them down lightly, then cover with a lid. Cook for 5 minutes.
- Flip and add cheese: Flip the mushrooms over, evenly divide the shredded gouda cheese inside each mushroom cap. Cover with the lid again, lower the heat to low, and cook for an additional 4-5 minutes until the cheese is melted. Top with the cooked onions and remove from heat.
- Assemble the burgers: Toast the burger buns if desired. Spread the Truff spicy mayonnaise on both sides of each bun. Add half a cup of arugula on the bottom bun, place the cooked mushroom with cheese and onions on top, then cover with the top bun. Serve immediately and enjoy.

- For a vegan option, substitute butter with vegan butter and gouda cheese with a plant-based cheese alternative.
- You can use plain mayonnaise if you prefer less spice instead of Truff spicy mayonnaise.
