Mushrooms
- 4 portobello mushrooms (stem and gills removed)
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- 1 tablespoon olive oil (for brushing mushrooms)
Onions
- 1 large sweet onion (thinly sliced)
- 1 tablespoon unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
Additional Ingredients
- 3 tablespoons unsalted butter
- 1 cup gouda cheese (shredded, or your favorite cheese)
- 2 cups arugula (divided)
- ¼ cup Truff spicy mayonnaise (or plain mayonnaise)
- 4 burger buns
Instructions
- Prepare the Onions: Cut the sweet onion in half, remove the skin, and thinly slice it. Heat a medium pan over medium heat, then add 1 tablespoon of butter and 2 tablespoons of olive oil. Add the sliced onions along with 1 teaspoon of kosher salt and cook for 15 minutes, stirring often until the onions are soft and caramelized.
- Prep the Mushrooms: While the onions cook, remove the stems and scoop out the gills from the portobello mushrooms using a spoon. Brush both sides of each mushroom with 1 tablespoon of olive oil using a pastry brush. Season the mushrooms with ½ teaspoon kosher salt and the garlic powder for flavor.
- Cook the Mushrooms – Step 1: Heat another pan over medium-low heat and add 3 tablespoons of butter. Once melted, place the mushrooms top side up in the pan and press down slightly. Cover with a lid and let cook for 5 minutes to soften and begin cooking through.
- Cook the Mushrooms – Step 2 & Assemble: Flip the mushrooms over, then divide the shredded gouda cheese evenly inside each mushroom cap. Cover with the lid again, reduce the heat to low, and cook for an additional 4-5 minutes to melt the cheese thoroughly. Top the mushrooms with the caramelized onions, then remove them from heat.
- Toast and Assemble the Burgers: Toast the burger buns if desired. Spread the Truff spicy mayonnaise on both sides of each bun, layer with arugula, place the mushroom burger with cheese and onions on top, and cover with the top bun. Serve immediately and enjoy your easy mushroom burgers.
Notes
- You can substitute gouda cheese with mozzarella, Swiss, or cheddar if preferred.
- Use plain mayonnaise if you don’t have Truff spicy mayonnaise.
- To keep it vegan, substitute butter with vegan butter and cheese with a plant-based alternative.
- Make sure not to overcrowd the pan when cooking mushrooms; cook in batches if necessary.
