Instructions

  1. Prepare the Truffle Filling: Place the gingersnap cookies into a food processor and blend until very fine crumbs form, creating the base for the truffle mixture.
  2. Combine Ingredients: Add the softened cream cheese, vanilla extract, ground cinnamon, and ground ginger to the food processor. Pulse or mix until the mixture is fully combined and reaches a thick, dough-like consistency.
  3. Form Truffle Balls: Using about one tablespoon of the mixture, roll it into balls and place each onto a parchment-lined baking sheet to keep them from sticking.
  4. Chill the Truffles: Freeze the formed balls for 20 to 30 minutes until they become firm enough to handle for coating.
  5. Melt Chocolate for Coating: Heat 12 oz of white chocolate in the microwave in 20-second intervals, stirring after each interval, until smooth and fully melted.
