Description

This easy cherry cobbler recipe features fresh sweet cherries baked under a tender, lightly sweetened batter. With simple pantry ingredients and a straightforward process, it’s perfect for a comforting dessert that highlights the natural flavor of ripe cherries. The cobbler is baked until golden and bubbly, offering a deliciously warm treat ideal for any season.

Ingredients

Scale

Fruit

  • 4 cups (560–660g) fresh sweet cherries, pitted and halved

Cobbler Batter

  • 6 Tablespoons (85g) unsalted butter, cut into 6 pieces
  • 1 cup (125g) all-purpose flour (spooned & leveled)
  • 3/4 cup (150g) granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (240ml) whole milk
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon almond extract

Topping

  • 1–2 Tablespoons coarse sugar for sprinkling (optional)

Instructions

  1. Preheat and melt butter: Preheat your oven to 350°F (177°C). Place the butter pieces evenly in a baking dish and put it in the oven to melt while you prepare the batter.
  2. Prepare the batter: In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. Add the whole milk, vanilla extract, and almond extract, whisking until the batter is smooth and free of lumps.
  3. Arrange cherries: Remove the baking dish with melted butter from the oven. Evenly spread the pitted and halved fresh cherries over the melted butter layer.
  4. Pour batter: Carefully pour the smooth batter over the cherries in the baking dish, ensuring even coverage.
  5. Sprinkle sugar: Optionally, sprinkle 1–2 tablespoons of coarse sugar on top of the batter to add a crunchy, sweet crust once baked.
  6. Bake: Place the baking dish in the oven and bake for 55 to 60 minutes. The cobbler is done when the top is golden brown and a toothpick inserted into the batter comes out clean.
  7. Cool before serving: Remove from the oven and allow the cobbler to cool for about 5 minutes to set before serving warm.

Notes

  • Use fresh, ripe sweet cherries for the best flavor; sour cherries can also work if you prefer a tangier taste.
  • You can substitute almond extract with a little more vanilla extract if almond flavor is not preferred.
  • Coarse sugar topping is optional but adds a delightful textured crust.
  • Serve with vanilla ice cream or whipped cream for an extra indulgent dessert.
  • Make sure to pit cherries thoroughly to avoid any hard pieces in the cobbler.
