Description

These Easy Cheesy Breakfast Rolls are a delightful and quick breakfast option featuring fluffy scrambled eggs, savory bacon, and melted cheese wrapped in flaky crescent roll dough. Perfectly baked to golden perfection, they make a satisfying meal for busy mornings or brunch gatherings.

Ingredients

Scale

Dough

  • 1 can refrigerated crescent roll dough (or homemade dough)

Egg Filling

  • 4 large eggs
  • 2 tbsp milk
  • 1 tbsp butter
  • Salt and pepper, to taste

Cheese and Meat

  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 4 slices cooked bacon or sausage (use beef or turkey bacon for substitution)

Garnish

  • 1 tbsp chopped chives or parsley

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Prepare Scrambled Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Melt the butter in a nonstick skillet over medium heat. Pour in the egg mixture and cook gently, stirring occasionally, until the eggs are just set but still soft. Remove from heat to avoid overcooking.
  3. Assemble Rolls: Unroll the crescent dough and separate into individual triangles. Place a spoonful of the scrambled eggs onto the wide end of each triangle. Top with a mix of shredded cheddar and mozzarella cheeses, then add pieces of cooked bacon or sausage.
  4. Roll and Place: Carefully roll each triangle from the wide end to the point, enclosing the filling. Place each roll seam-side down on the prepared baking sheet. Optionally, brush the tops with melted butter for a glossy finish.
  5. Bake: Bake the rolls in the preheated oven for 10 to 12 minutes, or until they turn golden brown and the cheese has melted thoroughly.
  6. Garnish and Serve: Remove the rolls from the oven, sprinkle with chopped chives or parsley, and serve warm for a delicious breakfast treat.

Notes

  • You can substitute bacon with sausage or turkey bacon to suit your preference.
  • For a vegetarian option, omit the meat and increase the cheese or add sautéed vegetables.
  • If homemade dough is not available, refrigerated crescent roll dough works perfectly and saves time.
  • These rolls can be prepared ahead and reheated gently before serving.
  • Ensure eggs are cooked softly to maintain a moist and tender filling inside the rolls.
