For the Mash
- 4 tbsp unsalted butter, cubed (plus more for topping)

- Fresh herbs (chives or parsley), chopped (for garnish)
Instructions
- Prepare the Potatoes: Place the peeled and quartered potatoes in a large pot. Add 1 tablespoon of salt and enough water to cover the potatoes by 4-5 inches.
- Cook the Potatoes: Bring the water to a boil over high heat. Once boiling, reduce heat to maintain a rapid simmer. Cook for 10-15 minutes or until the potatoes are very soft and easily pierced with a fork.
- Drain and Return to Pot: Drain the cooked potatoes well and return them to the pot to remove excess moisture and prepare for mashing.
- Mash with Butter and Cream: Add the cubed butter and warmed heavy cream to the potatoes. Mash thoroughly until the mixture is very smooth. Add additional cream as needed to achieve desired consistency.
- Serve and Garnish: Transfer the mashed potatoes to a serving bowl. Drizzle with extra melted butter and sprinkle with freshly chopped chives or your favorite herbs. Serve immediately for best flavor.
