Description

Scotcheroos are a deliciously sweet and crunchy no-bake bar made with crispy rice cereal coated in a peanut butter and corn syrup mixture, then topped with a rich layer of melted butterscotch and chocolate chips. These bars are perfect for a quick treat or dessert and combine classic flavors of peanut butter and butterscotch for a nostalgic snack.

Ingredients

Scale

Base

  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1â…“ cups creamy peanut butter
  • 6 cups Rice Krispies cereal (or cereal of choice)

Topping

  • 1½ cups butterscotch chips
  • ¾ cup semi-sweet chocolate chips

Instructions

  1. Prepare the pan: Grease a 9×13-inch baking pan thoroughly and set it aside to prevent sticking when spreading the cereal mixture.
  2. Heat sugar and corn syrup: In a large pot, combine the granulated sugar and light corn syrup. Heat over medium heat, stirring occasionally, until the sugar dissolves and the mixture starts to barely bubble, but be careful not to let it come to a full boil.
  3. Add peanut butter and cereal: Remove the pot from heat and stir in the creamy peanut butter until the mixture is fully combined and smooth. Gently fold in the Rice Krispies cereal until all the cereal is evenly coated with the peanut butter mixture. Then, spread this mixture evenly into the prepared baking pan and gently press it flat to compact the mixture.
  4. Melt the chips: Place the butterscotch chips and semi-sweet chocolate chips together in a microwave-safe bowl. Microwave in 10- to 30-second bursts, stirring between each session, until the chips are just melted and smooth. Avoid overheating to prevent the chips from becoming dry and crumbly.
  5. Top and cool: Pour the melted butterscotch and chocolate mixture evenly over the cereal base and spread it to the edges. Let the bars cool completely to allow the topping to set before cutting into squares and serving.

Notes

  • Use creamy peanut butter for smooth mixing and texture.
  • Substitute Rice Krispies with any crispy rice cereal or similar for a different twist.
  • For easier cutting, refrigerate after topping has been added.
  • Store bars in an airtight container at room temperature for up to a week.
  • Be careful when melting the chips to avoid burning; stir frequently.
