Instructions

  1. Preheat oven: Preheat your oven to 180°C (350°F) to prepare for baking the flan.
  2. Make caramel: In a pan over medium heat, melt the sugar until it turns a golden brown caramel. Quickly pour this caramel into the bottom of your baking pan, spreading it evenly, and allow it to harden.
  3. Prepare custard mixture: In a blender or bowl, combine the evaporated milk, heavy cream, sweetened condensed milk (or dulce de leche), eggs, and vanilla extract. Blend until smooth and well incorporated to ensure an even custard texture.
  4. Assemble flan: Pour the custard mixture gently over the set caramel in the baking pan, taking care not to disturb the caramel layer.
  5. Set up water bath: Place the baking pan into a larger pan. Fill the outer pan with hot water halfway up the sides of the flan pan to ensure gentle, even cooking.
