Instructions
- Prepare the dough: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy, about 2-3 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the semisweet chocolate chips, milk chocolate chips, and dark chocolate chunks if using.
- Shape and bake the cookies: Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheets, spacing the cookies about 2 inches apart. Bake for 10-12 minutes, or until the cookies are set but still slightly soft in the center. They will firm up as they cool, so be careful not to overbake them. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
