Instructions
- Soften the Dates (if needed): If your Medjool dates feel dry or firm, soak them in warm water for 5 to 10 minutes to soften. Once softened, drain thoroughly and pat dry to ensure the right consistency in your mixture.
- Blend the Almonds: Place the raw almonds into a food processor and pulse several times. Stop when almonds are coarsely chopped with small pieces remaining to add texture and crunch, avoiding turning them into fine meal.
- Add Remaining Ingredients: Add the pitted dates, ½ cup shredded coconut, vanilla extract, coconut oil if using, and a pinch of sea salt to the food processor. Blend until the mixture becomes thick, sticky, and holds together as a dough, scraping down the sides as needed for even mixing.
- Form the Balls: Using about 1 tablespoon of the mixture, roll it between your palms to form compact balls. Repeat this process until the entire mixture is used.
- Roll in Coconut: Optional but recommended, roll each formed ball in extra shredded coconut for a snowy coating that adds flavor and visual appeal.
