  • 1 1/2 cups freshly-shredded parmesan cheese (105 grams)

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and line two sheet pans with parchment paper. In a small bowl, whisk together one large egg and 1 tablespoon of water to create an egg wash and set aside.
  2. Roll Out Puff Pastry: Unroll one sheet of thawed puff pastry onto a lightly floured surface. Roll it out with a rolling pin into a 10×12-inch rectangle. Using a pastry brush, evenly coat the puff pastry with the egg wash, making sure to cover all edges thoroughly.
  3. Add Seasonings and Cheese: Sprinkle 1/2 teaspoon garlic powder, 1 teaspoon minced fresh rosemary, and 3/4 cup (52 grams) of freshly-shredded parmesan cheese evenly over the sheet. Season with kosher salt and freshly ground black pepper to your taste. Gently press the cheese and spices into the pastry using clean hands or the rolling pin to ensure it sticks well.
  4. Cut and Twist: Position the long edge of the pastry toward you, and cut the sheet into 12 strips about 1 inch wide using a pizza cutter or sharp knife. Pick up each strip by the ends and twist the ends away from each other until the strip cannot twist any further. Place 6 twists on each prepared sheet pan with space between them to allow for puffing. Any cheese or spices that fall off can be sprinkled back on the twists.
  5. Bake and Straighten: Bake the twists for 10 minutes at 375°F (190°C). If they begin to curl or lose their shape, carefully remove the pans from the oven using oven mitts and quickly straighten the twists by hand. Return the pans to the oven and bake for an additional 12-15 minutes until the twists are golden brown and crispy.
  6. Repeat and Serve: While the first batch bakes, repeat the process with the remaining sheet of puff pastry, garlic powder, rosemary, and parmesan to make the second batch. Once all 24 twists are baked, serve them warm or at room temperature as a delicious snack or appetizer.
