Description

  • 3 to 4 lb beef chuck roast
  • 1 packet ranch seasoning mix (about 1 oz)
  • 1 packet au jus gravy mix (about 0.87 oz)
  • Salt, to taste
  • Black pepper, to taste

Additional Flavorings

  • 5 to 6 pepperoncini peppers
  • Splash of pepperoncini juice (approximately 2 to 3 tablespoons)
  • 1/2 cup (1 stick) unsalted butter

Optional Vegetables

  • 1 cup baby carrots or halved small potatoes


Instructions

  1. Prepare the Roast: Lightly season the beef chuck roast with salt and black pepper on all sides to enhance the natural flavors.
  2. Layer Seasonings: Place the seasoned roast at the bottom of the crockpot. Evenly sprinkle the ranch seasoning mix and au jus gravy mix over the top of the roast to create a flavorful crust.
  3. Add Peppers and Butter: Arrange the pepperoncini peppers on top of the roast and pour a splash of the pepperoncini juice over everything to add tangy brightness. Then, place the sticks of unsalted butter directly on top of the roast.
  4. Add Optional Vegetables: If using, add baby carrots or halved potatoes around the edges of the meat inside the crockpot for a complete meal.
  5. Slow Cook the Roast: Cover the crockpot with its lid and cook on low for 8 hours or on high for 4 to 5 hours until the roast is very tender and easily shreds with a fork.
  6. Shred and Serve: Remove the lid and shred the beef directly in the crockpot using two forks, mixing it into the flavorful cooking juices. Serve the pot roast warm alongside mashed potatoes, rice, or fresh rolls.
