Ingredients
Scale
Chicken and Seasoning
- 4 boneless, skinless chicken breasts
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
Sauce
- 1 (10.5-ounce) can cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup low-sodium chicken broth
Topping
- 1 (6-ounce) box stuffing mix (such as Stove Top)
- 2 tablespoons butter, sliced
- 1 cup frozen green beans or mixed vegetables (optional)
Instructions
- Prepare Crock Pot: Lightly grease the bottom of your crock pot to prevent sticking and ensure easy cleanup.
- Season Chicken: Place chicken breasts in a single layer inside the crock pot. Sprinkle evenly with garlic powder, onion powder, and black pepper to infuse flavor.
- Make Sauce: In a medium bowl, combine the cream of chicken soup, sour cream, and low-sodium chicken broth. Mix until smooth and creamy.
- Add Sauce to Chicken: Spread this creamy mixture evenly over the seasoned chicken breasts in the crock pot.
- Add Stuffing and Butter: Sprinkle the dry stuffing mix evenly over the top of the sauce-covered chicken. Dot with slices of butter to enrich the stuffing as it cooks.
- Add Vegetables (Optional): If using, place frozen green beans or mixed vegetables on top or around the sides of the dish for added nutrition and color.
- Cook: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours. The chicken should be cooked through and tender when done.
- Fluff Stuffing and Serve: Before serving, fluff the stuffing with a fork to separate and lighten the texture. Serve warm, optionally accompanied by a side salad or steamed vegetables.
Notes
- You can substitute cream of mushroom or celery soup for a different flavor twist.
- This dish works great with leftover rotisserie chicken; if using cooked chicken, reduce the cook time slightly to avoid overcooking.
- Add shredded cheddar cheese on top during the last 30 minutes of cooking for a cheesy version.
