Description

This Crock Pot Chicken and Stuffing recipe is a comforting and easy-to-make slow cooker meal featuring tender chicken breasts smothered in a creamy sauce and topped with flavorful stuffing and butter. Perfect for a hearty family dinner, it’s a convenient and delicious dish that requires minimal prep and cooks slowly to meld all the flavors together.

Ingredients

Scale

Chicken and Seasoning

  • 4 boneless, skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper

Sauce

  • 1 (10.5-ounce) can cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup low-sodium chicken broth

Topping

  • 1 (6-ounce) box stuffing mix (such as Stove Top)
  • 2 tablespoons butter, sliced
  • 1 cup frozen green beans or mixed vegetables (optional)

Instructions

  1. Prepare Crock Pot: Lightly grease the bottom of your crock pot to prevent sticking and ensure easy cleanup.
  2. Season Chicken: Place chicken breasts in a single layer inside the crock pot. Sprinkle evenly with garlic powder, onion powder, and black pepper to infuse flavor.
  3. Make Sauce: In a medium bowl, combine the cream of chicken soup, sour cream, and low-sodium chicken broth. Mix until smooth and creamy.
  4. Add Sauce to Chicken: Spread this creamy mixture evenly over the seasoned chicken breasts in the crock pot.
  5. Add Stuffing and Butter: Sprinkle the dry stuffing mix evenly over the top of the sauce-covered chicken. Dot with slices of butter to enrich the stuffing as it cooks.
  6. Add Vegetables (Optional): If using, place frozen green beans or mixed vegetables on top or around the sides of the dish for added nutrition and color.
  7. Cook: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours. The chicken should be cooked through and tender when done.
  8. Fluff Stuffing and Serve: Before serving, fluff the stuffing with a fork to separate and lighten the texture. Serve warm, optionally accompanied by a side salad or steamed vegetables.

Notes

  • You can substitute cream of mushroom or celery soup for a different flavor twist.
  • This dish works great with leftover rotisserie chicken; if using cooked chicken, reduce the cook time slightly to avoid overcooking.
  • Add shredded cheddar cheese on top during the last 30 minutes of cooking for a cheesy version.
