Instructions
- Roast the Garlic: Preheat your oven to 400°F (200°C). Drizzle the whole head of garlic with a little olive oil, then wrap it tightly in foil. Place it in the oven and roast for about 30 minutes until the cloves are soft and golden, developing a sweet, mellow flavor.
- Cook the Potatoes: While the garlic roasts, peel and chop the russet potatoes into evenly sized pieces. Place them in a pot of salted water and boil until they are tender when pierced with a fork, which usually takes around 15 minutes. Drain the potatoes thoroughly to remove excess moisture.
- Combine Ingredients: Immediately squeeze the softened roasted garlic cloves out of their skins and add them into the warm potatoes. Add olive oil, sour cream (or Greek yogurt), lemon juice, salt, and black pepper to the pot.
- Mash or Blend: Using a blender or a potato masher, blend or mash the mixture until it becomes smooth and creamy. Taste and adjust seasoning with additional salt, pepper, or lemon juice as needed to balance the flavors.
- Garnish and Serve: Transfer the dip into a serving bowl. Drizzle with extra olive oil on top and sprinkle with freshly chopped chives or green onions. Add a pinch of paprika or chili flakes for an optional spicy garnish.
