Description

This Creamy Chicken & Mushroom Pasta is a comforting and flavorful dish featuring tender chicken breast strips and sautéed mushrooms in a rich, creamy Parmesan sauce. Perfectly cooked pasta is tossed together with the savory sauce for a quick and satisfying meal for any night of the week.

Ingredients

Scale

Pasta

  • 8 oz (225g) pasta (fettuccine or penne)

Chicken and Sauce

  • 2 tbsp olive oil
  • 2 boneless, skinless chicken breasts, cut into strips
  • 2 cups sliced mushrooms (cremini or button)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook Pasta: Cook pasta according to package directions until al dente. Drain the pasta and set it aside to be added later to the sauce.
  2. Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken strips with salt and pepper, then cook in the skillet for about 5 to 6 minutes until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  3. Sauté Mushrooms: In the same skillet, add butter and sauté the sliced mushrooms until they are browned and tender, approximately 5 minutes.
  4. Add Garlic: Add the minced garlic to the skillet and cook for about 1 minute, stirring frequently, until fragrant but not burnt.
  5. Simmer Broth: Pour in the chicken broth, stirring the mixture, and let it simmer for 2 minutes to allow the flavors to meld.
  6. Add Cream and Cheese: Reduce heat to low and stir in the heavy cream and grated Parmesan cheese. Let the sauce simmer gently for 3 to 5 minutes, stirring occasionally, until it thickens slightly.
  7. Combine Ingredients: Return the cooked chicken and pasta to the skillet. Toss well to coat all ingredients evenly with the creamy sauce.
  8. Garnish and Serve: Sprinkle chopped fresh parsley over the top and serve the dish warm for best flavor.

Notes

  • You can substitute heavy cream with half-and-half for a lighter version, but the sauce will be less rich.
  • For extra flavor, add a splash of white wine when simmering broth before adding cream.
  • Use gluten-free pasta to make this recipe gluten-free.
  • Freshly grated Parmesan provides better melt and flavor than pre-grated cheese.
  • Store leftovers in an airtight container for up to 3 days; reheat gently on stovetop.
