Instructions

  1. Sauté Aromatics: In a large pot, melt the butter or heat the olive oil over medium heat. Add diced onions and minced garlic, sautéing until translucent and fragrant, about 3-4 minutes.
  2. Cook Potatoes and Broth: Add the diced potatoes to the pot along with the vegetable or chicken broth. Bring the mixture to a boil, then reduce heat and simmer for 10 to 12 minutes, until the potatoes are tender.
  3. Add Broccoli and Simmer: Stir in the broccoli florets and cook for 5 more minutes to soften the broccoli but keep some texture.
  4. Blend Soup: Using an immersion blender, partially or fully puree the soup depending on your desired consistency. Blend carefully to create a creamy base while leaving some chunks if preferred.
