Instructions

  1. Sauté mirepoix: Heat 1 tablespoon olive oil in a large pot over medium heat. Add the diced onion, celery, and carrots. Cook, stirring occasionally, until the vegetables are softened and fragrant, about 5 minutes.
  2. Brown the ground beef: Add the ground beef to the pot with the mirepoix. Cook, breaking the beef into small pieces with a spoon, until fully browned and no longer pink, about 7 minutes. Drain excess fat if necessary.
  3. Add vegetables and liquids: Stir in the diced potatoes, diced tomatoes (with juices), corn, black-eyed peas, and beef broth. Mix well to combine with the beef and vegetables.
  4. Season and simmer: Add smoked paprika, chili powder, Italian seasoning, and salt. Bring the soup to a boil, then reduce heat to low and simmer uncovered for 15 minutes or until the potatoes are tender and the flavors meld together.
  5. Adjust and serve: Taste the soup and adjust seasoning with more salt or spices if desired. Serve the cowboy soup hot, optionally garnished with fresh herbs or a dollop of sour cream.
