Ingredients
Scale
Produce
- 1 medium onion, diced
- 2 stalks celery, diced
- 2 carrots, diced
- 2 cups Yukon Gold or baby red potatoes, diced
- 1 cup corn kernels (canned or fresh)
Meat
- 1 pound ground beef
Pantry
- 2 cups beef broth or bone broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup black-eyed peas or beans of choice, drained and rinsed if canned
- 1 tablespoon olive oil
Spices
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon Italian seasoning
- Salt to taste (about 1 teaspoon)
Instructions
- Sauté mirepoix: Heat 1 tablespoon olive oil in a large pot over medium heat. Add the diced onion, celery, and carrots. Cook, stirring occasionally, until the vegetables are softened and fragrant, about 5 minutes.
- Brown the ground beef: Add the ground beef to the pot with the mirepoix. Cook, breaking the beef into small pieces with a spoon, until fully browned and no longer pink, about 7 minutes. Drain excess fat if necessary.
- Add vegetables and liquids: Stir in the diced potatoes, diced tomatoes (with juices), corn, black-eyed peas, and beef broth. Mix well to combine with the beef and vegetables.
- Season and simmer: Add smoked paprika, chili powder, Italian seasoning, and salt. Bring the soup to a boil, then reduce heat to low and simmer uncovered for 15 minutes or until the potatoes are tender and the flavors meld together.
- Adjust and serve: Taste the soup and adjust seasoning with more salt or spices if desired. Serve the cowboy soup hot, optionally garnished with fresh herbs or a dollop of sour cream.
Notes
- Use bone broth for a richer flavor and extra nutrients.
- For a spicier soup, add cayenne pepper or chopped jalapeños.
- This soup can be made ahead and refrigerated for up to 3 days, or frozen for up to 3 months.
- Substitute ground turkey or chicken for ground beef for a leaner option.
- Add fresh herbs like cilantro or parsley to garnish for added freshness.
