  • 2 tbsp. lime juice
  • 1 tbsp. honey or maple syrup
  • 1/2 tsp. chipotle powder
  • 1/2 tsp. cumin powder
  • 1 tsp. sea salt (or to taste)
  • 1/4 tsp. black pepper (or to taste)


Instructions

  1. Cook the Orzo: Cook the orzo according to the package instructions until al dente. Once cooked, drain it thoroughly and rinse with cold water to stop the cooking process and cool the pasta.
  2. Prepare the Dressing: In a small jar, combine the extra virgin olive oil, lime juice, honey or maple syrup, chipotle powder, cumin powder, sea salt, and black pepper. Secure the lid and shake well until all ingredients are emulsified and well mixed.
  3. Combine Salad Ingredients: In a large bowl, add the cooled orzo, black beans, corn kernels, diced bell pepper, diced tomato, diced red onion, and chopped cilantro. Gently toss to mix all the ingredients evenly.
  4. Dress the Salad: Pour the prepared chipotle-lime dressing over the salad mixture. Toss gently but thoroughly to ensure every bite is coated with flavorful dressing.
