Description

A hearty and flavorful Cowboy Chili featuring ground beef, tomatoes, kidney and black beans, bell peppers, and aromatic spices, simmered to perfection. This comforting dish is perfect for a family dinner and brings a delicious southwestern flair to your table.

Ingredients

Scale

Protein and Vegetables

  • 1 lb ground beef (80/20)
  • 1 medium onion, chopped
  • 1 cup bell peppers, chopped (red or green)
  • 3 cloves garlic, minced

Canned Goods

  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) kidney beans, rinsed
  • 1 can (15 oz) black beans, rinsed

Spices and Broth

  • 2 tsp ground cumin
  • 2 tbsp chili powder (adjust to taste)
  • 2 cups low-sodium beef broth

Instructions

  1. Brown the Ground Beef: In a large pot over medium heat, add the ground beef and cook for about five minutes, stirring occasionally until browned. Drain any excess grease to avoid a greasy chili.
  2. Sauté Vegetables: Add the chopped onions and bell peppers to the pot and sauté until softened, approximately five minutes. Then, stir in the minced garlic and cook until fragrant, about one minute.
  3. Add Spices: Sprinkle the ground cumin and chili powder over the sautéed mixture. Stir well to combine and let cook for two minutes to allow the spices to release their flavors.
  4. Add Tomatoes and Beans: Pour in the crushed tomatoes, then add the rinsed kidney and black beans. Mix everything thoroughly until well combined.
  5. Incorporate Broth and Boil: Stir in the low-sodium beef broth and bring the chili to a gentle boil over medium-high heat.
  6. Simmer the Chili: Reduce the heat to low, partially cover the pot, and let it simmer for at least thirty minutes. Stir occasionally to deepen the flavors and prevent sticking.

Notes

  • For a spicier chili, increase the chili powder or add a pinch of cayenne pepper.
  • Use a leaner ground beef if you prefer a lower fat version.
  • Rinsing the beans reduces excess sodium and improves texture.
  • Simmering longer enhances the depth of flavor, so feel free to simmer up to an hour if time permits.
  • Serve with shredded cheese, sour cream, or chopped green onions for added flavor.
