Description

This hearty Cowboy Chili recipe combines ground beef, beans, tomatoes, and a blend of spices to create a flavorful and comforting dish perfect for a family meal. Simmered slowly to develop rich flavors, it’s a classic, filling chili that’s easy to prepare and sure to satisfy.

Ingredients

Scale

Protein and Beans

  • 1 lb ground beef (80/20)
  • 1 can (15 oz) kidney beans, rinsed
  • 1 can (15 oz) black beans, rinsed

Vegetables

  • 1 medium onion, chopped
  • 1 cup bell peppers, chopped (red or green)
  • 3 cloves garlic, minced

Liquids & Canned Goods

  • 1 can (28 oz) crushed tomatoes
  • 2 cups low-sodium beef broth

Spices

  • 2 tsp ground cumin
  • 2 tbsp chili powder (adjust to taste)

Instructions

  1. Brown the Beef: In a large pot over medium heat, brown the ground beef for about five minutes. Drain any excess grease to reduce fat content and improve texture.
  2. Sauté Vegetables: Add chopped onions and bell peppers to the pot; sauté until they soften, about five minutes. Stir in minced garlic and cook until fragrant, ensuring the base of flavor builds up well.
  3. Add Spices: Sprinkle ground cumin and chili powder over the meat and vegetable mixture; stir thoroughly and cook for two minutes to toast the spices and enhance their aroma.
  4. Combine Tomatoes and Beans: Pour in the crushed tomatoes and add the rinsed kidney and black beans. Mix well to combine all ingredients evenly.
  5. Add Broth and Simmer: Stir in the low-sodium beef broth, bring the chili to a gentle boil, then reduce heat to low.
  6. Simmer to Develop Flavor: Partially cover the pot and let the chili simmer on low heat for at least thirty minutes, stirring occasionally to prevent sticking and to deepen the flavors.

Notes

  • Adjust chili powder according to your preferred spice level.
  • For a thicker chili, simmer uncovered during the last 10 minutes to reduce liquid.
  • This chili can be made ahead and tastes even better the next day.
  • Serve with toppings like shredded cheese, sour cream, or chopped green onions if desired.
