  2. Add Marshmallows & Spices: Reduce the heat to low. Add 10 oz (4 cups) of mini marshmallows, ground cinnamon, brown sugar, and vanilla extract. Stir constantly until the marshmallows fully melt and the mixture becomes smooth and glossy.
  3. Stir in Cereal: Remove the pot from heat. Add the Rice Krispies cereal and quickly stir to coat all the cereal evenly with the marshmallow mixture.
  4. Add Extra Marshmallows: Fold in the remaining 1 cup of mini marshmallows. These will remain mostly intact, creating soft pockets throughout the treats.
  5. Press into Pan: Lightly grease a 9×13-inch baking pan with nonstick spray or butter. Use a buttered spatula or wax paper to evenly press the mixture into the pan without compacting too tightly, helping to keep the bars soft and chewy.
  6. Add the Churro Topping: In a small bowl, combine ⅓ cup granulated sugar with 1 tsp ground cinnamon. Sprinkle this mixture generously over the bars while they’re still warm to ensure it adheres well.
