Description

Indulge in these luscious Chocolate Raspberry Truffles, featuring a creamy raspberry ganache center coated in rich dark chocolate. Perfectly balanced with tart fruitiness and deep cocoa notes, these elegant treats are a delightful dessert or gift for chocolate lovers.

Ingredients

Scale

Raspberry Ganache

  • 1 â…“ cup Frozen raspberries
  • ¼ cup Powdered sugar
  • ¼ cup Heavy whipping cream
  • 7 oz Good quality white chocolate
  • 1 tbsp Water

Dipping

  • 7 oz Dark chocolate (52% to 70% cocoa)

Decoration (optional)

  • Pink chocolate or pink candy melts

Instructions

  1. Prepare Ganache: Combine frozen raspberries, powdered sugar, heavy whipping cream, white chocolate, and water in a saucepan. Gently heat over low heat, stirring constantly until the mixture is fully melted and smooth, creating a luscious raspberry ganache base.
  2. Chill Ganache: Transfer the ganache to a bowl and cover it. Refrigerate for about 2 hours, or until the mixture is firm enough to handle and shape.
  3. Form Truffle Centers: Using a small scoop or spoon, scoop the chilled ganache and roll it between your palms to form smooth, even balls. Place the formed truffles on a parchment-lined tray.
  4. Melt Dark Chocolate: In a heatproof bowl, melt the dark chocolate gently, either over a double boiler or in short bursts in the microwave, stirring frequently to ensure a smooth and glossy coating.
  5. Dip Truffles: Using a fork or dipping tool, dip each ganache ball into the melted dark chocolate to fully coat. Allow excess chocolate to drip off before placing the truffle back on the parchment.
  6. Decorate (Optional): While the coating is still wet, drizzle or decorate the truffles with pink chocolate or pink candy melts to add a pop of color and visual appeal.
  7. Set and Serve: Let the chocolate coating harden completely at room temperature or in the refrigerator before serving or packaging.

Notes

  • Use high-quality chocolates for the best flavor and smooth texture.
  • Ensure the ganache is thoroughly chilled so it’s easier to shape.
  • If you don’t have pink chocolate or candy melts, you can use freeze-dried raspberry powder or edible glitter for decoration.
  • Store truffles in an airtight container in the refrigerator for up to one week.
  • Allow truffles to come to room temperature before serving for optimal flavor and texture.
