Raspberry Ganache

- ¼ cup Powdered sugar
- ¼ cup Heavy whipping cream
- 7 oz Good quality white chocolate
- 1 tbsp Water
Dipping
- 7 oz Dark chocolate (52% to 70% cocoa)
Decoration (optional)
- Pink chocolate or pink candy melts
Instructions
- Prepare Ganache: Combine frozen raspberries, powdered sugar, heavy whipping cream, white chocolate, and water in a saucepan. Gently heat over low heat, stirring constantly until the mixture is fully melted and smooth, creating a luscious raspberry ganache base.
- Chill Ganache: Transfer the ganache to a bowl and cover it. Refrigerate for about 2 hours, or until the mixture is firm enough to handle and shape.
- Form Truffle Centers: Using a small scoop or spoon, scoop the chilled ganache and roll it between your palms to form smooth, even balls. Place the formed truffles on a parchment-lined tray.
- Melt Dark Chocolate: In a heatproof bowl, melt the dark chocolate gently, either over a double boiler or in short bursts in the microwave, stirring frequently to ensure a smooth and glossy coating.
- Dip Truffles: Using a fork or dipping tool, dip each ganache ball into the melted dark chocolate to fully coat. Allow excess chocolate to drip off before placing the truffle back on the parchment.
- Decorate (Optional): While the coating is still wet, drizzle or decorate the truffles with pink chocolate or pink candy melts to add a pop of color and visual appeal.
