Description

These Chocolate-Dipped Peanut Butter Banana Bites are a delicious and healthy snack featuring ripe banana slices sandwiched with creamy peanut butter, dipped in rich dark chocolate, and optionally sprinkled with sea salt. Quick to prepare and perfect for satisfying sweet cravings with wholesome ingredients, these bites are ideal for a guilt-free treat or party appetizer.

Ingredients

Scale

For the Banana Bites

  • 2 large ripe (but firm) bananas
  • 1/2 cup creamy peanut butter (or almond butter)
  • 1 cup dark or semi-sweet chocolate chips
  • 1 tablespoon coconut oil (optional, helps chocolate melt smoothly)
  • Sea salt flakes (optional, for topping)

Instructions

  1. Prepare the Bananas: Peel the bananas and slice them into 1/2-inch thick rounds. Keep the slices uniform in size to ensure evenly sized sandwiches for consistent taste and melting.
  2. Assemble the Sandwiches: Spread about 1/2 teaspoon of peanut butter onto one banana slice. Press a second banana slice on top to form a sandwich. Repeat this process for all banana slices.
  3. Freeze the Sandwiches: Line a baking sheet with parchment paper and arrange the banana-peanut butter sandwiches in a single layer. Freeze for 15 to 20 minutes until they become firm enough to dip in chocolate without falling apart.
  4. Melt the Chocolate: Combine the chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring between intervals until the chocolate is fully melted and smooth. Alternatively, melt using a double boiler on the stovetop for controlled heating.
  5. Dip the Sandwiches: Remove the frozen banana sandwiches from the freezer. Using a fork, dip each sandwich halfway into the melted chocolate, allowing excess chocolate to drip off. Place them back on the parchment-lined tray. If desired, sprinkle sea salt flakes on top before the chocolate sets for a contrast of flavors.
  6. Set in the Freezer: Return the dipped sandwiches to the freezer and chill for 15 minutes or until the chocolate coating is completely firm and set. Once ready, serve immediately or store them frozen for later enjoyment.

Notes

  • Use firm but ripe bananas for best texture that holds together during dipping.
  • Coconut oil is optional but helps achieve a smoother and shinier chocolate coating.
  • Feel free to substitute peanut butter with almond butter or another nut butter to suit preferences or allergies.
  • If you prefer a sweeter bite, opt for semi-sweet chocolate chips instead of dark chocolate.
  • These bites are best served cold and stored in the freezer to maintain their shape and texture.
  • Sea salt flakes add a lovely contrast but can be omitted for a sweeter version.
