Description

A creamy, savory low carb casserole featuring tender chicken, fresh spinach, and sautéed mushrooms baked to perfection with a cheesy topping. This American-inspired dish is perfect for a healthy, gluten-free dinner that’s both comforting and satisfying.

Ingredients

Scale

Chicken and Vegetables

  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups fresh spinach, roughly chopped
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup chopped onion
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning

Dairy and Cheese

  • 1/2 cup heavy cream
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat Oven: Preheat your oven to 375°F to prepare for baking the casserole.
  2. Sauté Chicken: Heat olive oil in a large skillet over medium heat. Add chicken pieces, season with salt, pepper, and Italian seasoning, then sauté for 6–8 minutes until thoroughly cooked. Remove chicken and set aside.
  3. Cook Vegetables: In the same skillet, add chopped onions and sliced mushrooms, cooking for 4–5 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.
  4. Wilt Spinach: Stir in the chopped spinach and cook until it wilts completely.
  5. Create Creamy Sauce: Reduce heat to low, then stir in the softened cream cheese and heavy cream, mixing until the sauce becomes smooth and creamy.
  6. Combine Chicken and Sauce: Return cooked chicken to the skillet and stir well to evenly coat it with the creamy vegetable mixture.
  7. Assemble Casserole: Transfer the entire mixture to a greased 9×13-inch baking dish, spreading evenly.
  8. Add Cheese Topping: Sprinkle shredded mozzarella and grated Parmesan cheese evenly over the top of the casserole.
  9. Bake: Bake uncovered for 20–25 minutes until the cheese is bubbly and golden brown on top.
  10. Rest and Serve: Allow the casserole to rest for 5 minutes before serving to let flavors meld and to cool slightly.

Notes

  • Using rotisserie chicken can reduce preparation time significantly.
  • Add red pepper flakes for a spicy kick to enhance the flavor.
  • Kale can be substituted for spinach if preferred for a different leafy green option.
