Instructions
- Preheat Oven: Preheat your oven to 375°F to prepare for baking the casserole.
- Sauté Chicken: Heat olive oil in a large skillet over medium heat. Add chicken pieces, season with salt, pepper, and Italian seasoning, then sauté for 6–8 minutes until thoroughly cooked. Remove chicken and set aside.
- Cook Vegetables: In the same skillet, add chopped onions and sliced mushrooms, cooking for 4–5 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.
- Wilt Spinach: Stir in the chopped spinach and cook until it wilts completely.
- Create Creamy Sauce: Reduce heat to low, then stir in the softened cream cheese and heavy cream, mixing until the sauce becomes smooth and creamy.
- Combine Chicken and Sauce: Return cooked chicken to the skillet and stir well to evenly coat it with the creamy vegetable mixture.
- Assemble Casserole: Transfer the entire mixture to a greased 9×13-inch baking dish, spreading evenly.
