Ingredients
Scale
Chicken Filling
- 2 cups cooked chicken breast, shredded or diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup ranch dressing
Add-ins
- 1 cup cooked rice, warm
- 1/2 cup corn kernels (optional)
- 1/2 cup black beans, rinsed and drained (optional)
- 1 cup shredded cheddar jack cheese
- 2 ripe avocados, sliced
- Chopped fresh cilantro (optional)
Other
- 4 large flour tortillas
Instructions
- Heat Chicken: Heat olive oil in a skillet over medium heat. Add the cooked chicken and season with garlic powder, onion powder, paprika, salt, and black pepper. Stir and cook until the chicken is warmed through, about 3-5 minutes.
- Mix Ranch: Remove the skillet from heat and stir in the ranch dressing until the chicken is evenly coated with the dressing.
- Warm Tortillas: Warm the flour tortillas according to package directions or over a dry skillet until pliable and heated.
- Assemble Burritos: Lay each tortilla flat on a clean surface. Layer each with warm rice, ranch-coated chicken, shredded cheese, sliced avocado, and if desired, corn kernels and black beans. Sprinkle with chopped cilantro if using.
- Roll Burritos: Fold the sides of the tortilla over the filling and roll tightly from one end to the other to form burritos.
- Optional Toasting: Serve immediately or, for a crispy finish, place the burritos seam-side down in a skillet over medium heat and toast until lightly golden and crisp, about 2-3 minutes.
Notes
- For extra flavor, add a squeeze of fresh lime juice over the avocado slices before assembling.
- You can use grilled chicken instead of plain cooked chicken for a smoky flavor.
- Customize with your favorite salsa or hot sauce for added heat.
- To make it gluten-free, substitute flour tortillas with gluten-free tortillas.
