Description

This Chicken Ranch Avocado Burrito combines tender, seasoned chicken with creamy ranch dressing and ripe avocado, wrapped in a warm flour tortilla with rice, cheese, and optional corn and black beans. It’s a flavorful and satisfying Tex-Mex inspired meal perfect for a quick lunch or dinner.

Ingredients

Scale

Chicken Filling

  • 2 cups cooked chicken breast, shredded or diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ranch dressing

Add-ins

  • 1 cup cooked rice, warm
  • 1/2 cup corn kernels (optional)
  • 1/2 cup black beans, rinsed and drained (optional)
  • 1 cup shredded cheddar jack cheese
  • 2 ripe avocados, sliced
  • Chopped fresh cilantro (optional)

Other

  • 4 large flour tortillas

Instructions

  1. Heat Chicken: Heat olive oil in a skillet over medium heat. Add the cooked chicken and season with garlic powder, onion powder, paprika, salt, and black pepper. Stir and cook until the chicken is warmed through, about 3-5 minutes.
  2. Mix Ranch: Remove the skillet from heat and stir in the ranch dressing until the chicken is evenly coated with the dressing.
  3. Warm Tortillas: Warm the flour tortillas according to package directions or over a dry skillet until pliable and heated.
  4. Assemble Burritos: Lay each tortilla flat on a clean surface. Layer each with warm rice, ranch-coated chicken, shredded cheese, sliced avocado, and if desired, corn kernels and black beans. Sprinkle with chopped cilantro if using.
  5. Roll Burritos: Fold the sides of the tortilla over the filling and roll tightly from one end to the other to form burritos.
  6. Optional Toasting: Serve immediately or, for a crispy finish, place the burritos seam-side down in a skillet over medium heat and toast until lightly golden and crisp, about 2-3 minutes.

Notes

  • For extra flavor, add a squeeze of fresh lime juice over the avocado slices before assembling.
  • You can use grilled chicken instead of plain cooked chicken for a smoky flavor.
  • Customize with your favorite salsa or hot sauce for added heat.
  • To make it gluten-free, substitute flour tortillas with gluten-free tortillas.
