Ingredients
Scale
Vegetables
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1 jalapeño, minced
- 1 cup corn kernels, frozen
Dry Ingredients & Spices
- 1 cup dry long-grain white rice
- 2 tablespoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon sea salt
Protein
- 450 g cooked chicken, shredded
- 14 oz can black beans, strained and rinsed
Liquids & Oils
- 3 1/2 cups chicken broth
- 1 tablespoon olive oil
- 2 tablespoons tomato paste
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
- Sauté Vegetables: In a skillet over medium heat, warm the olive oil. Add the diced red onion, bell pepper, and minced jalapeño. Cook until the vegetables become soft and fragrant, about 5-7 minutes.
- Combine Ingredients: In a large bowl, mix together the sautéed vegetables, dry rice, shredded cooked chicken, rinsed black beans, frozen corn kernels, chicken broth, chili powder, garlic powder, cumin, oregano, and sea salt. Stir until all ingredients are well combined and evenly distributed.
- Prepare Baking Dish: Grease a 9×13 inch baking dish lightly to prevent sticking. Pour the mixture into the dish, spreading it evenly. Optionally, top with cheese of your choice for added richness.
- Bake Covered: Cover the baking dish with aluminum foil to lock in moisture. Bake in the preheated oven for 25 minutes to allow the rice to absorb the flavors and cook through.
- Bake Uncovered: Remove the foil and continue baking for another 10-15 minutes. This step helps the casserole become bubbly and develop a slight crust on top.
- Serve: After baking, let the casserole cool for a few minutes. Garnish with green onions or fresh herbs as desired, then serve warm and enjoy your delicious, wholesome meal.
Notes
- Use cooked chicken from leftovers or rotisserie chicken to save time.
- For a vegetarian version, substitute chicken with additional beans or tofu and use vegetable broth.
- Adding cheese on top is optional but adds great flavor and creaminess.
- Ensure the rice is covered by broth evenly for proper cooking.
- Garnish with fresh cilantro or green onions for extra freshness.
- You can adjust the spice level by modifying the amount of jalapeño or chili powder.
