Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) ensuring it reaches the right temperature for baking the casserole evenly.
- Sauté Vegetables: In a skillet, heat 1 tablespoon olive oil over medium heat. Add the diced red onion, red bell pepper, and minced jalapeño and cook until the vegetables soften and become fragrant, about 5–7 minutes.
- Combine Ingredients: In a large bowl, mix together the sautéed vegetables, 1 cup dry long-grain white rice, shredded cooked chicken, black beans (drained and rinsed), frozen corn, 3 1/2 cups chicken broth, 2 tablespoons tomato paste, 2 tablespoons chili powder, 1 teaspoon garlic powder, 1 teaspoon cumin, 1/2 teaspoon oregano, and 1/2 teaspoon sea salt until well combined.
- Prepare Baking Dish: Grease a 9×13 inch baking dish to prevent sticking. Pour the combined mixture evenly into the dish. Optionally, you can sprinkle cheese on top for added richness.
- Bake Covered: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes to allow the rice to cook and the flavors to meld.
